Bacon, Cucumber, Tomato Flatbread

OK. Here we go! As promised… here is my first ever Five Ingredient Foodie recipe! This recipe is so easy that almost all of the ingredients are in the name of the dish, including the bacon!

Below the recipe you will find an explanation of why I picked this dish to share with you.

Bacon, Cucumber, & Tomato Salad on Flatbread
Time: 20 minutes; Servings: 2

The Ingredients:

1. 5 pieces of thick-cut bacon
2. 1/2 of a medium cucumber
3. 1/2 quart of cherry tomatoes
4. 1/4 cup of Mayonnaise
5. 2 pieces of flatbread – I recommend using naan.
1/4 teaspoon of Black Pepper

The Instructions: 

1. We are going to oven-fry the bacon instead of frying it in a pan on the stove. (Check out this post about why you should fry bacon in the oven instead of in a pan on the stove.) Place the oven rack in the middle position and preheat the oven to 375 degrees. Lay the five pieces of bacon on an aluminum foil-lined baking sheet (this will make it a lot easier to clean up afterwards). When the oven is preheated, put the bacon in the oven and set the timer for 8 minutes.

When the timer goes off, turn the tray in the oven 180 degrees (this will help make sure the bacon cooks evenly). Set the timer for another 8 minutes (but be sure to watch it to make sure it doesn’t get done sooner since ovens and bacon vary). When the bacon is finished (you’ll be able to tell because it will look like yummy bacon instead of slabs of fat), pull it out of the oven and use tongs or a fork to remove it from the pan and place it on a paper towel-lined plate (this helps get rid of the grease).

While the bacon finishes cooking…

2. Rinse the cucumber and cherry tomatoes under running water and pat dry with a kitchen towel.

3. Use a sharp, large knife (check out this post to find out which knives I use) to cut the cucumber in half (keep half and put the other half in a baggie in the refrigerator for future use). Cut the half cucumber into slices that are 1/4 inch thick. Then lay the slices flat and chop each slice into wedges (cut in half and then in half again). Put the chopped cucumber into a large mixing bowl.

4. Using the same knife, carefully slice each cherry tomato in half.  Add the chopped tomatoes into the mixing bowl.

Prepared Ingredients

Once the bacon is finished cooking and is cool enough to handle…

5. Stack the bacon strips on top of each other and cut them in half long ways. Then chop the strips into half inch pieces. Add the chopped bacon into the mixing bowl.

6. Add about 1/4 cup of mayonnaise (more or less based on your preference) to the mixing bowl.

7. Add about 1/4 teaspoon of pepper (or as much as you want based on your preference – I use a lot of pepper) to the mixing bowl.

8. Use a big spoon to mix all of the ingredients in the bowl together.

Mixed Ingredients

9. Warm the flatbread (either in the toaster if they are small enough or in the oven for a few minutes). Place each warm flatbread on a plate and top with half of the salad. Enjoy!

So why did I pick this recipe?

First off… While I recognize that bacon isn’t the healthiest of meats, everyone loves bacon. I knew if I included bacon in the first recipe, basically everyone on earth would be more likely to consider trying it. And that’s my primary goal… to get you to cook for yourself! Also, this recipe is reminiscent of a familiar classic, the BLT! It’s just been elevated a little. I didn’t want to go to far out of the box on the first post! I also chose this recipe because it is pretty simple to make. You really only need an oven, a cookie sheet, a knife, a bowl, and a fork and you can make this dish! Furthermore, cucumber and cherry tomatoes are both in season here in the northeast right now and I’m a big advocate of eating in-season, local produce (which will also likely be the topic of another post).

This recipe got two thumbs up from the hubby who made the bacon for me before I got home because I only had about 15 minutes to both make and eat dinner last night (and take the pictures for this post, too!). So I suspect it will be made again in the near future when I’m in a hurry! I hope you will give it a shot too!

  8. Then add about 1/4 teaspoon of pepper (or as much as you want based on your preference) to the mixing bowl.

  10. Warm the flatbread (either in the toaster or in the oven for a few minutes). Place each warm flatbread on a plate and top with half of the salad.
